
Party Cookie Sandwich

Cookies:
- ½ cup butter (unsalted )
- ½ cup peanut butter
- ¼ cup brown sugar
- ¼ cup white sugar
- 2 pieces eggs
- 1 pack Celebrations by Sharon Party Cupcake Mix 200g
- 1 cup slivered almonds
Salted Caramel Frosting:
- ½ cup butter, unsalted
- 3 cups confectioners’ sugar
- ½ cup caramel syrup
Prepare Cookies:
- Preheat oven to 350ᵒF/177ᵒC. Grease and line two cookie sheets.
- Cream together butter, peanut butter and sugars. Beat in the eggs.
- Mix and stir in the almonds.
- Using a #27 ice cream scooper, scoop batter and transfer into cookie sheets.
- Bake for 7-10 minutes or until edges are slightly brown.
Prepare Caramel Frosting:
- Cream butter.
- Add confectioners’ sugar and caramel syrup alternately.
- Beat until smooth and fluffy.
Assemble:
- Pipe out frosting on cookies. Use a star piping tip.
- Cover with another cookie.
