
Chia Oatmeal Raisin Cookies

- 1 2/3 cups MAYA All-Purpose Flour
- 1 teaspoon Cinnamon Powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butter (softened )
- 1/2 cup white sugar
- 1/2 cup brown sugar (packed )
- 1/4 cup honey
- 1 piece egg
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup chia seeds (soaked )
- 1 cup raisins
- Preheat oven to 350ᵒF/177C. Line a cookie sheet with baking paper.
- Set aside. Sift together the flour, cinnamon powder, baking soda, and salt. Set aside.
- Cream the butter, white sugar, brown sugar, and honey until fluffy. Beat in egg and vanilla.
- Add the flour mixture and mix until well incorporated. Fold in the oats, raisins, and chia seeds.
- Scoop or spoon batter onto the prepared cookie sheet. Make sure that there is at least a 2-inch space in between cookies because they will spread during baking. Bake for 15-18 minutes until evenly golden brown.
- Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
