
Adobo sa Gata

- 2 tablespoons cooking oil
- 2 pieces medium size red onion, (chopped )
- 6 cloves garlic (minced )
- 1 teaspoon whole black pepper
- 2 pieces bay leaf
- 250 grams pork kasim, (adobo cut )
- 1/4 cup water
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 1/2 cups coconut milk
- 2 to 3 pieces red chilies, (whole or chopped, for toppings )
- Heat oil in a medium-sized stock pot over medium heat.
- Sauté onion and garlic, then add whole black pepper and bay leaf.
- Add pork and sauté until the pork turns to brown color.
- Add water and soy sauce, stir and let it boil, with occasional stirring.
- Then add the vinegar, but do not stir. Let it boil first for around 1 to 2 minutes, before stirring.
- Let it boil until the meat is tender and the adobo sauce, almost dries out.
- Then add the coconut milk and stir. Let it boil for around 1 to 2 minutes, then put in a simmering stage until the sauce is reduced to your desired consistency.
- Turn the heat off and transfer in a serving bowl and topped it up with red chilies.
