
Cheesy Bacon and Egg Bread

- 1 piece French bread
- 1/4 cup melted butter
- 2 cloves garlic (minced)
- parsley (finely chopped)
- 4 piece Canadian bacon
- 8 pieces bacon
- 1/4 cup mozzarella (grated)
- 1/4 cup quick melting cheese (grated)
- 4 pieces eggs
- 1 bunch spring onions (chopped)
- Preheat oven to 400⁰F/200⁰C.
- Using a 2 ½ inch square shape cutter cut 4 squares well down the length but not all the way thru. Scoop out the bread filling.
- Mix butter, garlic, and parsley. Mix well. Brush the wells of the French bread with butter mixture.
- Arrange bacons inside the square wells and add cheeses. Don’t fill the well up, leave enough space enough contain the egg.
- Cover the French bread with foil and bake for 10 to 15 minutes.
- Remove French bread from the oven and remove aluminum foil.
- Crack eggs into a ramekin and slide it off to the French bread wells, sprinkle cheese on top of the egg.
- Bake again for another 5 minutes or until eggs are set and cooked to the desired doneness. Sprinkle with chopped spring onions and serve.
