Chicken And Broccoli Creamed Soup

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 200 g chicken breast fillet (cut into cubes)
  • 1 piece large carrot (peeled and cubed)
  • 2 stalks celery (chopped)
  • 2-3 tablespoons MAYA All-Purpose Flour
  • 3-4 cups chicken stock
  • Salt and pepper (to taste)
  • 1 head broccoli florets
  • ½ teaspoon thyme
  • ½ cup heavy cream
  • ½ bar cheddar cheese
  1. Heat up oil and butter in a soup pot over medium heat.
  2. Place chicken in the pot, and cook until meat becomes opaque. Add in carrots and celery, continue cooking for 2-3 minutes. Blend in flour and give a good stir. Pour stock and let it boil. Add in broccoli and thyme, cook for another 3-5 minutes or until broccoli is al dente.
  3. Lower heat and put in a simmering stage, then add in cream and cheese, lightly stir then turn off heat. Best served warm.

Yield: 4-6 servings
