
Honey Mustard Chicken Fillet

- 1/4 cup honey
- 1/4 cup yellow mustard
- 4 cloves garlic (minced )
- 500 grams chicken thigh fillet
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 tablespoons oil
- 1 cup chicken stock
- 2 tablespoons brown sugar
- parsley (chopped )
- In a bowl, mix honey, yellow mustard, and garlic. Mix well and set aside.
- Season chicken fillet with salt and pepper.
- In a medium-sized non-stick pan, heat oil over medium heat.
- Fry seasoned chicken fillet for 1-2 minutes each side or until chicken is cooked and tender. Remove the fried chicken from the pan and set aside.
- Using the same pan, pour in the chicken stock and let it simmer.
- Once simmering, add the honey-mustard mixture and add the brown sugar. Let it simmer again, with continuous stirring.
- Toss the fried chicken fillet on the honey-mustard sauce.
- Serve over cooked rice, top with chopped parsley.
