
Mango Refrigerator Cake

Butter Cake
- 1 pack MAYA Oven Toaster Butter Cake Mix 200g
- ¼ cup butter (softened)
- 2 eggs
- ½ cup water
Soft Custard Filling
- ¼ cup sugar
- 1 tablespoon MAYA Cornstarch
- 1/8 teaspoon salt
- 1 cup milk
- 1 egg yolk
- 1 tablespoon butter
- ½ teaspoon vanilla
Gelatin
- 2 tablespoons unflavored gelatin powder
- ½ cup water
- 1 tablespoon sugar
- 2 whole ripe mangoes (sliced thinly)
Prepare Butter Cake
- Preheat oven to 350°F/177°C. Grease and line with baking paper the bottom and sides of a 9x9x2-inch square pan. Leave a 2-inch overhang on all sides. Set aside.
- (K) Cream the butter in a bowl until soft. Blend in the eggs and water. Add the butter cake and beat with a wooden spoon.
- (K) Pour mixture into the prepared pan.
- (K) Bake for 30-35 minutes or until done. Do not remove from the pan.
Prepare custard filling:
- (K) Blend sugar, cornstarch, and salt in a saucepan. Whisk in milk and egg yolks.
- (K) Cook over medium heat until thick while stirring constantly. Remove from heat. Stir in butter and vanilla. Allow to cool slightly.
Prepare gelatin mixture:
- (K) Combine unflavored gelatin, water and sugar. Bring to a boil and stir until dissolved.
- (K) Set aside and allow to cool slightly.
To assemble:
- (K) Pour custard filling on top of the butter cake.
- (K) Arrange thin mango slices on top of the custard.
- (K) Pour gelatin over the mangoes. Chill until ready to serve. Decorate as desired.
