
Poutine Fries

Fries:
- 3-4 pieces large potato
- water for soaking
- 1/2 cup MAYA All-Purpose Flour
- 1/2 cup MAYA Cornstarch
- 1/2 tablespoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon paprika
- salt and pepper
- ice cold water
- mozzarella cheese (cubed (for toppings))
- spring onions (chopped (for toppings))
- gourmet sausage of your choice (fried then sliced)
Gravy:
- 1/2 cup butter
- 3 tablespoons flour
- 1 piece beef cube
- 1 tablespoon soy sauce or liquid seasoning
- 1 cup fresh milk
- 3/4 cup water
- salt and pepper
- Wash potato to remove dirt and soil. Cut it into thick fries.
- Boil potatoes for 2 to 3 minutes or until the potatoes are half-cooked. Drain and let it cool for 5 to 10 minutes.
- In another bowl, mix flour, cornstarch, onion powder, garlic powder, paprika, salt and pepper. Mix well.
- Heat oil in a medium pot.
- Dredge cut potatoes with the flour mixture, and then dip it in the cold water, and coat again with flour mixture.
- Deep fry the cut potatoes until brown. Set aside.
For gravy sauce:
- In a small pot, melt butter, and then add flour and mix well until there are no lumps. Add beef cube and soy sauce.
- Add fresh milk and water, whisk until the gravy mixture thickens. Add salt and pepper to taste. Set aside.
Assembly:
- Assemble freshly cooked French fries in a clean plate, creating a bed of fries.
- Top it with cubed mozzarella and pour in the hot gravy enough to melt the mozzarella cheese.
- Top with sausage and spring onion then serve right away.
Yield: 3-4 servings
