
Roasted Chicken Savory Hotcakes

- 1 to 2 cups left over roasted chicken (shredded)
- 4 pieces square ham (chopped)
- 1 piece large-onion (chopped)
- 1/2 cup cheddar cheese (cubed)
- 1/4 cup scallions (chopped)
- 1 pack MAYA Complete Hotcake Mix 500g
- 1 ¾ cups water
- salt and pepper to taste
- In a medium-sized bowl, mix shredded chicken, ham, onion, cheese and scallions. Set aside.
- In another bowl, mix hotcake mix and water. Mix well until there is no lumps (add more water if you think the hotcake batter mix is too thick).
- Add the hotcake batter to the shredded chicken mixture and mix well. Season with salt and pepper.
- Heat a medium-size frying pan over medium heat and brush the frying pan with oil.
- Scoop ½ cup of the chicken-hotcake mixture and pour into the pre-heated pan and form it into a hotcake round shape. Let it cook until top is bubbly, then flip the hotcake.
- Repeat cooking procedure until chicken-hotcake mixture is consumed.
- Serve while its hot. For better tasting, pour ample amount of maple syrup on top.
